This Strawberry-Rhubarb Crumble for Two is divine, especially topped with a scoop or two of vanilla ice cream or frozen yogurt. Who doesn’t love a seasonal, fruity dessert that’s ready in under an hour?

Strawberry-Rhubarb Crumble for Two is a great treat for the season!

I was inspired to make this dessert after a visit with a high school friend a few years ago. It was so fun to catch up on the patio of a good restaurant on a beautiful day, sharing memories, a bunch of laughs, and of course, dessert!

One of the desserts we shared at lunch the other day was a rhubarb crumble.

When we walked into the restaurant we saw the kitchen staff chopping a bunch of rhubarb, so it must have been in the back of my mind for a few days.

Perfect for date night -- or any night -- Strawberry-Rhubarb Crumble for Two is quite a seasonal treat!

Strawberry-Rhubarb Crumble for Two is easy to put together and it makes a great dessert for just a couple of folks. If you’d like, you can easily double this recipe. I probably should have done just that, because I wanted more!

When I was little, our wonderful neighbor, Mrs. Sutton, grew rhubarb in her backyard garden.

I remember how amazed I was by its enormous green leaves (they’re poisonous, so no eating the leaves) and the pretty crimson stalks, all the while dreaming of the glorious pie she would make with that rhubarb!  

Scoop it up while it's warm! Strawberry-Rhubarb Crumble for Two will be gone before you know it!

Since I have mini cast iron skillets, I knew this smaller batch dessert would be a ideal option. It was so easy to put together, and in all honesty, it turned into my lunch the day I made it!

The tart rhubarb isn’t quite so tart when you mix it with fresh strawberries, sugar, a touch of lemon juice, and then top it with a sweet, crispy crumble.

I can’t wait to make this dessert again. It has springtime — and good memories — written all over it!

Strawberry-Rhubarb Crumble for Two

This seasonal treat is easy to put together and makes for a great dessert for two people. Sweet and just a touch tart, this dessert can easily be double to serve a few more.

Ingredients

  • 1-1/2 cups diced strawberries
  • 1-1/2 cup diced rhubarb (about 2 large stalks) cut into 1-inch pieces
  • 1/4 cup sugar
  • 2 tablespoons water
  • 1/2 teaspoon lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 cup cold butter, cut into pieces
  • Optional: top with scoops of vanilla ice cream or frozen yogurt

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Add the strawberries, rhubarb, sugar, water, and lemon juice to a saucepan over medium-high heat. Cook until the rhubarb softens. Remove from the heat.
  3. Combine the flour, oats, brown sugar, and ginger in a bowl. Whisk to combine.
  4. Add the butter and use your fingers to combine the mixture. Squeeze the butter lightly and toss it with the dry ingredients until crumbly.
  5. Divide the fruit mixture between 2, 6-inch mini cast iron skillets. Divide the topping and sprinkle it over the fruit.
  6. Bake for 20-25 minutes or until the topping is golden and the fruit mixture is bubbly.
  7. Remove, cool slightly, and serve topped with 1-2 scoops of your favorite vanilla ice cream or frozen yogurt.

Notes

The leaves of rhubarb plants are poisonous, so be sure to discard them. You can easily double this recipe to serve more.

    Strawberry & Rhubarb are my two favorite Spring flavors--I crave this combo each and every year. In a crumble like this (yum!), in a trifle, a pie, a cake, or just a simple jam--I have to have it. This looks super easy and super delicious!

    These mini cast iron dishes are the cutest - I have to get some. I used to make rhubarb crumble all the time growing up (our neighbour used to grow it too :) ), but I haven't had it in so long! This sounds beautiful combined with the strawberries - I will have to give it a try!

    I love, love, love rhubarb crumble. My mom used to grow rhubarb and I looked forward to crumbles and pies every summer. The large leaves served as a shelter for a bird's nest that fell out of our pear tree as well. Such a great plant. :)

    We are picking our first batch of rhubarb tomorrow and I had no idea what to make with it till i saw your recipe :) I dont have mini skillets, but i do have two 6" pie plates, would they work ok?

      Hi Dc - Hmmm... the cast iron skillets are about 3.5 inches each, so I think a 6" pie plate would work. You might have a bit extra filling. Let me know if you try this and if it works!

        Ok..you may want to change the recipe directions as you listed the mini skillets as 6 inches..Thats why i thought i could use 2 pie plates but the smaller size will make one pie plate, the extra filling will fit Im pretty sure but I will let you know how it turned out. A perfecttreat for my hubby , thanks for the quick reply!
