Pineapple-Orange & Cardamom Creamsicles

Pineapple-Orange & Cardamom Creamsicles might take you back in time for a few minutes. Reminiscent of the bright orange, creamy frozen goodies from childhood, these treats are a bit more grown up, thanks to the added cardamom. If you’re hot and looking for a chilly treat, you’ll love these frozen pops!

I was inspired to make these creamsicles the day before I was supposed to have my wisdom teeth removed. But, since I rescheduled my appointment (for the third time — yes, I’m a big baby!), it will now just be a treat that’s perfect to serve anytime this summer. That’s more fun anyway!

So, yeah. I needed to have my wisdom tooth removed. I had rescheduled the procedure three times: once because of my own nervousness, a second time because my husband was traveling (who would take care of me?), and a third time…well…I felt a cold coming on, and who wants to be sick and have surgery at the same time?!

Pineapple-Orange & Cardamom Creamsicles are tasty frozen treats! Pineapple-Orange & Cardamom Creamsicles are delicious when it's hot out (and even when it's not)! Pineapple-Orange & Cardamom Creamsicles make a great summertime treat!

Since I sort of had a cold, I thought the vitamin C in these pops (pineapple is loaded with vitamin C) would help get me on the road to recovery in no time. But guys, they’re so good!

I used Greek yogurt to add the “creamy” to these creamsicles, and frozen juice concentrate and fresh pineapple pieces for the sweetness. I wanted to give these creamsicles more of a grown-up feel from the pops from our childhood, so I added cardamom to the mix. I’m so glad I did. These Pineapple-Orange & Cardamom Creamsicles turned out terrific: the cold and creamy paired perfectly with the aromatic cardamom.

Ingredients

  • 2 cups plain Greek yogurt
  • 6 ounces pineapple-orange juice concentrate, thawed
  • 1 tablespoon orange zest, plus more, if desired (see note below)*
  • 3/8 teaspoon ground cardamom
  • 1/3 cup small diced pineapple

Instructions

  1. Whisk together the yogurt with the pineapple-orange juice concentrate.
  2. Add the orange zest and cardamom to the mixture, then fold in the pineapple.
  3. Pour the mixture into the molds, and add wooden or plastic sticks into the center of the molds. Freeze upright for at least 6 hours. *Before freezing, if you’d like, add orange zest over the tops of the creamsicles (which is actually the bottoms of the frozen creamsicles).
  4. To remove the creamsicles from their molds, run them under warm water for a few seconds (take care not to run the tops under water) to help loosen them.
  5. Serve immediately.

    These look fabulous Patricia -- love how you've styled them with the chalkboard style messages too... so great! The cardamom excites me ;-) and I might just have to add a little coconut milk too -- mmmm.

    I LOVE the cardamom addition to these pops. I'd get my wisdom teeth out (again) if it meant I'd get these popsicles. If I promise to come take care of you, will you make a double batch to keep on hand for your new live-in nanny? ;)

    They look so perfect, haha! I'm not a huge fan of pineapple - I like the taste, but not the texture. So it's perfect if it's mixed up with some other ingredients. Pineapple screams summer.

    Okay I have had a cold for 3 weeks now, really want a popsicle but don't like the sugar content in them plus the only benefit is the cold. BUT!!! These vitamin C loaded and cold to sooth my soar throat!! YES PLEASE!!! Can't wait to try!
