Italian Sub Salad

This Italian Sub Salad is one that can serve you well as your main dish. It incorporates all the elements of a hearty Italian sandwich with much less bread.

This Italian Sub Salad makes a hearty meal you can personalize with your favorite ingredients.

Whether you call them hoagies, subs, heroes, grinders, or something altogether different, nothing beats a satisfying sandwich you can wrap your hands around. This Italian Sub Salad gives you all the flavor of a traditional sandwich, in salad format!

Italian Sub Salad

Big croutons take the place of sandwich bread in this satisfying salad, and you most definitely don’t want to leave them out. They’re a perfect addition to help soak up the slightly tangy, creamy dressing.

Croutons are big in my house. In fact, I could eat them as a snack! I usually make them with rosemary and Parmesan cheese for added flavor. You might leave off the rosemary if you make these or this Italian Sub Salad, but you do you! Check out my recipe for Rosemary-Parmesan Croutons you can use for this salad.

Just like a sub sandwich satisfies, so will this Italian Sub Salad. The croutons take the place of sandwich bread, and the deli meat and cheese add substance to this salad. I use Romaine lettuce because I think it’s a little heartier, but you can use whatever lettuce you love.

This isn’t a wimpy side-salad: It’s hearty enough to serve as a main dish! The ingredients are chopped to help deliver a delicious taste in every bite.

My husband has been making this sub-style salad lately and I’ve been loving it. For the dressing he read somewhere to squeeze a bit of mayo across the top of the salad and toss with the red wine vinaigrette dressing. The idea is that you get a taste of the mayo every now and then to provide that creamy factor.

I decided to mix the two dressings together (although I admit his technique works well, too) and dress the salad in one swoop. This recipe is all about what you like. The ingredients listed here are enough to make two large salads for your next meal.

Do it up however you like: You can focus more on the vinaigrette than creamy mayo; add green olives instead of black; toss in some peppadew peppers instead of pepperoncini. Leave out the onion. You get the picture! It’s just like ordering your favorite sandwich at the deli and adding (or leaving off) all the things you love.

Like I said, make this salad as you would order your favorite sandwich. Check out some ideas for ingredients to use:

  • Red onion
  • Bell pepper
  • Banana peppers
  • Peppadew peppers
  • Black or green olives
  • Tomatoes
  • Ham
  • Pepperoni
  • Capicola
  • Mozzarella cheese

Ingredients

    For the Salad
  • 6 cups Romaine lettuce, torn into bite-sized pieces
  • 1/4 red onion cut into thin strips
  • 1/4 cup Italian-style deli olives (black and green), rough chopped
  • 1/4 cup pepperoncini rings
  • 2 tomatoes, diced
  • 6 slices provolone cheese
  • 6 slices salami (same size as, or enough to cover the slices of cheese)
  • For the Dressing
  • 1/4 cup red wine vinegar salad dressing
  • 2 tablespoons mayonnaise (more to taste)
  • 1 cup crunchy croutons

Instructions

    For the Salad
  1. Lay the provolone cheese slices out individually. Cover with the salami and roll them up, hold together and cut into slices. Set aside.
  2. Add the remaining ingredients to a large bowl, along with the croutons. Lay the cheese and salami rolls over the top of the salad.
  3. For the Dressing
  4. Combine the red wine vinegar and the mayonnaise. Whisk and taste, and adjust the amounts as you prefer.
  5. Pour the dressing over the salad and gently toss to combine.
  6. Serve in individual bowls.

Notes

The ingredients for this recipe are enough to make 2 large, individual salads. Adjust the ingredients if serving for more people as a main dish.
