BLT Salad with Garlic-Basil Dressing is just what I needed for a great meal on a hot day. Give this classic sandwich-as-a-salad dish a try! You’ll love the zesty, fresh dressing that’s super-easy to make.

Easy salad recipes include this BLT Salad with Garlic-Basil Dressing

I was going to make some yummy, classic BLT sandwiches with the gorgeous tomatoes I had on hand. However, moldy buns prevented me from making the sandwiches I wanted to wrap my hands around. Quick switch to BLT Salad with Garlic-Basil Dressing!

I’ve been picking up our groceries curbside, and have been getting the worst produce and cheese, and apparently, bread. Anyone else, or just me? It’s been so frustrating!

Easy salad recipes like BLT Salad with Garlic-Basil Dressing are so tasty!

BLT Salad with Garlic-Basil Dressing

Good thing I had good lettuce and cherry tomatoes on hand! I was able to pivot and make this BLT Salad with Garlic-Basil Dressing. Mmm! A classic sandwich in salad form –delicious!

Like the sandwich, this BLT Salad with Garlic-Basil Dressing includes sweet tomatoes and salty pieces of bacon. For the “bread,” my husband made his famous croutons that I can’t keep my hands off!

Sometimes he adds a little extra to the croutons like for this recipe for Sausage, Kale, and White Bean Soup with Rosemary-Parmesan Croutons.

This Garlic-Basil Dressing is fresh and tasty.

Are you a crouton fan? If you are, you should try this Kale and Cornbread Crouton Salad. I made the croutons from leftover cornbread around the holidays.

The dressing? Well that’s something that adds a whole bunch extra to this salad. I was going to use it on the sandwiches I dreamed of making, but it turned out to be just perfect for the salad.

I was excited to find a good way to put some fresh basil from the garden to use. The garlic-basil dressing is really fresh and full of great flavor. It’s super-easy to make, too, so even better, right?

If you’ve got tomatoes on hand and you’re looking for a good salad dressing, try my Fresh & Zesty Tomato Dressing.

BLT Salad with Garlic-Basil Dressing is a delightful salad.

Go classic-with-a-twist with this BLT Salad with Garlic-Basil Dressing. It makes a great meal! It’s perfect for the season!

Ingredients

    For the salad:
  • 6 ounces favorite lettuce greens
  • 1 cup cherry tomatoes, halved
  • 5 slices cooked bacon, torn into small pieces
  • For the dressing:
  • 1/4 cup mayonnaise
  • 1/4 plain Greek yogurt
  • 2 cloves garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon lemon juice
  • Zest from 1/2 small lemon
  • 15 basil leaves
  • For the croutons:
  • 1-1/2 cups Italian-style bread torn into 2-inch piece
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated Parmesan cheese

Instructions

    For the dressing:
  1. Mince the garlic on a cutting board, and sprinkle the salt over it. Use the back of a knife to rub the salt and garlic together back and forth until it forms a smooth paste.
  2. Add the mayonnaise, yogurt, garlic paste, black pepper, lemon juice and zest, and the basil leaves to a food processor.
  3. Pulse until the basil is in small pieces. Stir to combine.
  4. Refrigerate until ready to serve.
  5. For the Croutons:
  6. Preheat the oven to 400 degrees F.
  7. Add the oil, salt, black pepper, and cheese to a bowl. Add the bread and toss with your hand to coat.
  8. Transfer the pieces of bread to a baking pan and bake for 5-10 minutes or until it begins to turn golden.
  9. Remove and set aside.
  10. For the salad:
  11. Add the salad greens, tomatoes, and bacon to a bowl. Drizzle about 6 tablespoons of the dressing over the ingredients and toss to combine. Add a bit more dressing if you’d like.
  12. Add the croutons, toss and evenly divide between salad bowls.
