Fresh & Zesty Tomato Dressing

Fresh & Zesty Tomato Dressing is so easy to whip up! Your salads will thank you when you pour this dressing over the top of them. Homemade salad dressings are super-simple to make and so fresh!

Fresh & Zesty Tomato Dressing is perfect for the summer season! If you’re one of the lucky ones who have tomatoes growing in your backyard, grab a few of them for a fabulous salad. BUT…

Instead of slicing them up to toss into your bowl, blend them up with a few other ingredients and turn them into salad dressing. I’m not sure why I hadn’t thought of making a salad dressing using tomatoes before, but I’m going to do it all summer!

I love tomatoes. They’re the crowning glory for my Egg Sandwich with Arugula Pesto and Roasted Tomatoes.

Tomatoes are easy to turn into a simple and tasty side like these Italian-inspired Green Beans in Tomato Sauce. And they’re ideal for this delightful Roasted Tomato and Vegetable Soup with Gin Drizzle. You’ll love this soup when the fall rolls around!

But we’re here to talk about Fresh & Zesty Tomato Dressing! If you put tomatoes IN your salads, there’s no reason you can pour them OVER your salads, too! The flavor of this dressing is really bright thanks to lemon juice and a touch of basil, and I’m not sure I can have tomatoes without garlic! The next time I make this, I might even add some grated Parmesan cheese to the mix.

All combined, you’ve got a fresh and simple salad dressing. Nothing beats homemade – there are no weird ingredients involved, and you won’t have to find space in the refrigerator door for yet another bottle of store-bought salad dressing.

This is the time of year when tomatoes are at their all-time best, so why not use them as many ways as possible? I guarantee this Fresh & Zesty Tomato Dressing will be perfect for pretty much any salad you can toss together!

Ingredients

  • 2 medium-sized tomatoes
  • 2-3 cloves garlic
  • 1 teaspoon lemon zest
  • Juice from 1/2 lemon
  • 2 basil leaves
  • Salt and ground black pepper to taste

Instructions

  1. Add all the ingredients to a blender. Pulse until smooth.
  2. Adjust seasoning to taste.

    These photos truly make my hungry! I love that this dressing is an easy one to make, and it uses fresh summer ingredients! I have NEVER made my own dressing but I really want to make this, plus the dressing is full of veggies, so why not? This is awesome!

    I've never thought to make a tomato dressing before. This does sound really light and refreshing on a summer salad. And I'm sure it adds tons of unique flavor for both savory and sweet toppings. I gotta try it out for myself soon!

    This looks and sounds similar to French dressing, which is my favorite! I have been looking for a good homemade version so I don't have to keep buying a bottle. I will definitely be trying this out once I have some fresh tomatoes.
