Spinach and Couscous Salad with Strawberries, Avocado & Honey-Lime Dressing is an ideal salad for the summer (don’t fret — there’s still time to make and enjoy it)! The strawberries and avocado are the wonderful “extras” in this salad, and the dressing is simply scrumptious. It’s a new favorite of mine!
I hate when I’m the last to know about something fabulous. I mean, I think I’m pretty good at staying on top of the latest and greatest if I say so myself.
And that, my friends, is why this Spinach and Couscous Salad with Strawberries, Avocado & Honey-Lime Dressing came as such a (delicious) surprise to me. A similar version of this dish showed up at a family picnic this summer.

My husband’s cousin brought this salad to the picnic and I could barely stop eating it. I tried to show some restraint cuz, you know how families can talk!
When I asked her if I could make it for my blog and give her credit, she looked at me like I was nuts. Like, “okay weirdo lady that my cousin married!”
Anyway, I had been thinking of this salad for about a month. It’s the perfect salad for the summer, and I now know that many others think so, too.

So, folks, I can’t claim this recipe as my own, but it’s delicious. I’m willing to bet you’ll love the summer’s juicy strawberries and the creamy avocado tossed into the mix in this dish. The Israeli (sometimes called pearl) couscous adds heartiness to the salad and makes a nice alternative to traditional pasta salads.

This salad is much lighter than a standard pasta salad, and OH EM GEE the honey-lime dressing is so tasty I could drink it!

Ingredients
- 3 cups cooked Israeli (pearl) couscous
- 6 ounces fresh spinach
- 4 small avocados, cut into chunks
- 2-1/2 cups sliced strawberries
- 2 ounces toasted pine nuts or almonds
- 1/3 cup fresh lime juice
- 1/4 cup honey
- 1/2 teaspoon Dijon mustard
- 1-2 cloves garlic
- Salt and black pepper to season
Instructions
- To make the dressing, combine the lime juice, honey, Dijon mustard, garlic, and salt and pepper. Whisk to combine.
- Combine the couscous, spinach, avocados, strawberries, and pine nuts in a large bowl.
- Whisk the dressing again, then pour it over the salad ingredients and toss to coat.
