It’s hard to believe today is May 1 (wasn’t it just winter??) and that we’ll be celebrating Cinco de Mayo this week. Cinco de Mayo is definitely something I look forward to each year.

To help you celebrate, I gathered up a few of my Mexican-inspired recipes. You’re sure to find something that everyone will love.
