Easy Bruschetta with Mascarpone, Grilled Asparagus & Radicchio

May 25, 2020 By Patricia 18 Comments

Easy bruschetta with mascarpone, grilled asparagus & radicchio is amazing as an easy, light meal or appetizer. The colors alone are gorgeous, but the flavors are fabulous!

One of my favorite things to make and eat, or order out at restaurants (because really, how can you go wrong?) is bruschetta. Sometimes I beg my husband to make it for dinner.

He always finds great ingredient combos to put together, like those in this easy bruschetta with mascarpone, grilled asparagus & radicchio, drizzled with a tasty balsamic glaze. After you make this version, try my grilled asparagus, prosciutto, and Brie bruschetta.

I could eat bruschetta for every meal! This is easy to make and you’ll love the flavors: the rich mascarpone holds together the slightly bitter radicchio and the lightly sweet grilled asparagus. The sweet and tangy balsamic glaze over the top is its crowning glory.

Do you love asparagus? I can never get enough of it. If you love it, too, try my recipe for bacon, egg and asparagus ramen (Mazeman style).

Lately we’ve been sharing meals and baked goods and any extra food (like mistakenly delivered grocery items) with our neighbor. We shared food before we were all stuck in our homes, but now it just seems like we should.

Maybe it’s because we don’t get to grocery stores or restaurants like we used to, or of the irrational fear that we won’t get something we need from the store. We’ve also been trying to use what’s in the fridge for our meals, and I knew the leftover radicchio needed a purpose.

Recently, our neighbor called and asked if we wanted a loaf of Italian bread the grocery store substituted in her order. Bread? Uh, yes, please. It was a bit dry for sandwiches, so we decided that it would be perfect for bruschetta.

This bread was pre-sliced, and a little thinner than I’d use for bruschetta, but it worked well. My husband grilled it along with the asparagus. Next, I slather each slice of bread with the creamy mascarpone, piled on the radicchio and asparagus pieces, then drizzled the balsamic over the top.

This is the perfect lunch (or dinner), and a great way to make use of that slightly dried-out bread and lingering radicchio!

Give this easy bruschetta with mascarpone, grilled asparagus, and radicchio a try. Whether you have the items to use up, or you need to add them to your grocery list, I can guarantee this to be a tasty lunch, dinner, or even appetizer.

This looks so good! I'm a huge fan of bruschetta as well. I found a recipe recently that had you grilling the mozzarella cheese too, so that's been on my list to try, but I'm going to add this one to my list too - after all, you can never have too much bruschetta!

Oh man you had me at mascarpone - my absolute favorite cheese ever! I love bruschetta in any form, but I really like the idea of using asparagus in the spring.
