Chocolate Chip Skillet Cookie with Dried Cherries & Pistachios

Oh yes, I will be making this Chocolate Chip Skillet Cookie with Dried Cherries & Pistachios again in the very near future. I teased this on Instagram a few weeks ago, then forgot to share the recipe! It’s a delight!

Trust me, I may have forgotten to share the recipe for this Chocolate Chip Skillet Cookie with Dried Cherries & Pistachios, but I haven’t forgotten how super-scrumptious it is. No joke. I can’t stop thinking about it! What a great dessert this is!

Whether you choose to add the bits and pieces of dried cherries and pistachios as written in the recipe, or you go rogue (like my sister likes to do) and use walnuts, dried blueberries, raisins, or your favorite things instead, I know you’ll love this sweet treat.

Guess I’ve been stress eating a lot since starting to work from home way back when in March. No doubt there’s a lot going on in the world, both in the big world, and in my little personal world.

Chocolate Chip Skillet Cookie with Dried Cherries & Pistachios

If you need a touch of simple joy in your life, go on and make this Chocolate Chip Skillet Cookie with Dried Cherries & Pistachios. While there are a million cookie skillet recipes (including mine for Oatmeal-Chocolate Chip Skillet Cookie – oooh! I need to make that again soon, too!), I slightly adapted this recipe from The Kitchn, one of my favorite recipe sites.

I made this my own by using the dried cherries my neighbor gave me, and including some of the pistachios I had in the pantry. Definitely a winning flavor combo!

This skillet cookie is thick and super-rich. If you want an extra dose of indulgence, dig in while the cookie is still warm! I couldn’t quite wait for it to cool, and let me tell you it was amazing!

There was plenty left to enjoy even after it cooled down. Even cooled down, this is one thick and satisfying cookie!

Chocolate Chip Skillet Cookie with Dried Cherries & Pistachios

Ingredients

  • 2-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 10 ounces chocolate chunks (I used a larger-sized chip than regular)
  • 1/3 cup dried cherries
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat the oven to 375 degrees F. Be sure to use a seasoned, 10-inch cast-iron skillet for baking.
  2. Add the flour, baking soda, and salt in a bowl, and whisk to combine.
  3. In a separate, large bowl, add the butter, brown sugar, and granulated sugar. Use a mixer to blend everything together until smooth.
  4. One at a time, add the eggs to the butter mixture, along with the vanilla. Blend until combined.
  5. A little at a time, add the flour mixture to the butter mixture. Use a wooden spoon to stir the mixture. Mix until well combined.
  6. Add the chocolate chunks/chips, the dried cherries, and the pistachios to the mixture. Mix well until combined.
  7. Transfer the mixture to the skillet and spread it out evenly.
  8. Add the reserved pistachio pieces over the top, evenly and lightly press down.
  9. Bake for about 25 minutes, or until the top and edges are lightly golden. Insert a knife in the center to make sure it comes out fairly clean (it’s okay if it has some of the cookie transfers to the knife).
  10. Remove the skillet from the oven and add the remaining chocolate chunks/chips over the top.
  11. Allow the cookie to cool before slicing, unless you prefer to dig in while still warm and gooey.

    My husband is allergic to pistachios so we'd have to leave those out of this recipe but I love the addition of dried cherries to a classic recipe.
