St. Patrick’s Day Mint-Chocolate Popcorn Snack is ideal for any March 17 (and beyond) festivities! What’s a holiday without a fun treat? This snack is colorful and fun, with all sorts of goodies tossed into the mix.

St. Patrick's Day Mint-Chocolate Popcorn Snack is a festive way to add cheer to the day! It's easy to make and fun to eat!

Popcorn is one of my favorite snacks, and let me tell you, adding chocolate drizzle, chocolate-mint cookie bits, mint flavor, and sprinkles certainly doesn’t make me like it less! This St. Patrick’s Day Mint-Chocolate Popcorn Snack is good any day of the year!

St. Patrick’s Day Mint-Chocolate Popcorn Snack

You know the saying in America, “Everyone is Irish on St. Patrick’s Day?” Many of us celebrate by eating and drinking anything Irish (and even things that we simply associate with being Irish — like anything green).

Those traditions can be silly, but they’re definitely fun.

St. Patrick's Day Mint-Chocolate Popcorn Snack adds a bit of green to your day! It's a fun way to celebrate!

A popcorn snack is about as easy as it comes and with a few added ingredients, this mint-chocolate popcorn snack keeps things simple and tasty — and ideal for St. Patrick’s Day!

If you want a few recipes that are green in color for the sake of tradition, try my recipe for Pea and Ricotta Spread as an appetizer or my recipe for Farro and Pea Salad with Lemon-Mint Vinaigrette as part of a light meal. Both are super springy, delicious, and, well, green.

Ingredients

  • 6 cups popcorn, popped
  • 10 ounces white chocolate chips
  • 1 tablespoon coconut oil or Crisco
  • 12 chocolate-mint sandwich cookies, broken into pieces
  • Mint extract
  • Green food color
  • Colored candy sprinkles

Instructions

  1. Lay a sheet of parchment on two baking pans and set aside.
  2. Add the popcorn to a large bowl and allow it to cool. Once cool, add the cookie pieces. Toss and spread out evenly in one layer between the two baking sheets. Remove any unpopped kernels.
  3. Add the white chocolate chips and the oil or Crisco to a microwave-safe bowl. Heat in the microwave, working in 15-second increments, until melted. Stir until smooth.
  4. Add a few drops of food color and mint extract to the melted chips. Stir to combine.
  5. Drizzle over the popcorn-cookie mixture. Quickly add the candy sprinkles.
  6. Add the baking sheets to the freezer for 5-10 minutes so the melted chocolate hardens.
  7. Remove, break into pieces and serve.

    It's funny, I'm not a big chocolate fan but if you put mint or a berry with it suddenly it's a game changer and I cannot get enough, especially if there's mint chocolate.

    My husband and I snack on popcorn nearly every night, and I was just mentioning about two days ago how we need to begin experimenting with adding flavors and other ingredients into our popcorn to "spice it up"! I love this idea SO much - even if it's not ON St. Patrick's Day! Super creative - and it sounds delicious!
