I’ve (already) been easting a lot of ice cream lately, and it’s not even summer yet. Thanks a lot, Phoenix, for your 100+ temps so early in the year.

Oh, who am I kidding? I eat ice cream in the winter, too! 

Frozen Yogurt Bark with Caramel, Cashews and Chocolate is a simple dessert that you'll make over and over!

My waistline is begging me to take a break from ice cream, so when I heard about this WW (Weight Watchers) treat, I thought I’d take a spin at making the frozen dessert perfect on a hot night.

Frozen Yogurt Bark with Caramel, Cashews and Chocolate

I made this frozen yogurt bark with full-fat Greek yogurt, but I’m sure the non-fat version is a good option, too. I love mix-ins in my ice cream, so cashews and caramel (and a sprinkling of chocolate chips) popped into my head as the perfect combination.

I love a good treat, especially if it includes caramel drizzle! If you’re looking for something special made with yogurt, try my chocolate, vanilla & strawberry frozen yogurt cups. You’ll love these for breakfast or dessert.

This bark was so easy to make that I made two other options! I made one with kiwi and strawberries (about 1 cup worth of diced fruit) and unsweetened coconut sprinkled over the top.

The other version I made was delicious, too: Raspberry jam and graham cracker crumbs (can’t you just feel the cheesecake vibe?). I used about two teaspoons of raspberry jam and swirled it in with the yogurt (I also dotted a few tiny dollops all around the top of the yogurt) and crumbled the graham cracker (one square) over the top before popping it in the freezer.

So when I say easy, I mean easy! Toss in your mix-ins and toss this in the freezer until later. It’s truly that simple.

What you’ll need to make this frozen yogurt bark

  • One cup of plain Greek yogurt
  • 1-2 teaspoons honey, more to taste
  • 1/4 teaspoon pure vanilla extract
  • 2 teaspoons cashews, chopped
  • 2 teaspoons caramel sauce
  • 2 teaspoons chocolate chips
  • Aluminum foil
  • A few hours to wait for the bark to harden in the freezer

The mix-in possibilities for this bark are endless, and I know it’s gotta be a little better for me than a few scoops of Ben & Jerry’s (no offense). Pop any leftovers into a baggie and store them in the freezer for another night.

Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 teaspoon honey
  • 1/4 teaspoon pure vanilla extract
  • 2 tablespoons chopped cashews, divided
  • 2 teaspoons caramel sauce, extra as you’d like
  • 2 teaspoons chocolate chips

Instructions

  1. Line a baking sheet with aluminum foil.
  2. Add the yogurt to a bowl with the honey and vanilla and mix well to combine.
  3. Add half the cashews to the yogurt and mix well.
  4. Transfer the mixture to the foil-lined pan. Use a spatula to spread it out evenly, roughly in the shape of a rectangle, about 1/4-inch thick.
  5. Sprinkle the remaining cashews over the top along with the chocolate chips.
  6. Freeze for a few hours or overnight.
  7. When hard, remove and let it sit for a few minutes, then use a sharp knife to cut it into chunks.
  8. If you’d like, drizzle with a bit more of the caramel sauce just before serving.
  9. Serve immediately.
  10. Store any leftovers in the freezer.

    This recipe is so unique, I've never thought about freezing yogurt before. But this is a great way to use up leftover yogurt before it goes bad. I want to try that jam and graham cracker version too, sounds delicious :)
