Chilled Tortellini, Tomato and Melon Salad with Lemon-Mint Dressing

Meatless Monday is here, and this week, I’m bringing you one of my new favorite summer dishes: Chilled Tortellini, Tomato and Melon Salad with Lemon-Mint Dressing. It’s a little like combining a pasta salad with a fruit salad – with amazingly delicious results!

There’s nothing like taking what the summer gives us – things like cantaloupe and tomatoes – and tossing them up in a bowl! I also love pasta, so add that to the bowl, drizzle it with a fragrant dressing, and a sprinkling of Parmesan cheese for good measure.

The combination of Chilled Tortellini, Tomato and Melon Salad with Lemon-Mint Dressing might seem a little…shall we say, interesting? And it is, but in the best possible way.

Have you ever had cantaloupe and prosciutto together as an appetizer? The sweet melon mingling with the salty prosciutto is divine! And that’s what you get with this Meatless Monday meal, minus the meat: the cheese tortellini provides the right touch of saltiness to mix with the melon. Toss in golden, gem-like tomatoes, a touch of lemon and fresh mint, and you’ve got yourself something amazing to dig into.

    Tortellini is one of my favorite pastas, the thick texture is what I enjoy most. I've also fallen hard for cherry tomatoes. I'm always on the prowl for a new Meatless Monday recipe.

    I love the idea of using tortellini in a "pasta" salad, it probably adds so much more flavor, and the possibilities are endless since they come in so many flavors as well. Those melon balls look so perfect, I really have to make a melon salad!
