Baked Eggnog Oatmeal with Apples and Walnuts

Oatmeal is, of course, a hearty breakfast option that you can turn into a flavorful dish in so many ways by adding fresh fruit, dried fruit, spices, nuts, milk or yogurt, and so much more.

I typically add plain milk to my breakfast oatmeal but since it’s the holidays, I thought eggnog would be a fun idea. The eggnog adds richness and infuses it with fantastic flavor. The apples add texture, and are the perfect match to the cinnamon, nutmeg, and brown sugar.

Let’s not stop there. I think you’ll love the scattering of glazed walnuts that top this warm and hearty dish. Serve it with a little extra eggnog on the side and get ready to start your day off right.

Baked Eggnog Oatmeal with Apples and Walnuts Ingredients:

  • Oats – Can’t make this hearty dish without them!
  • Apples – You only need two apples to add a healthy dose of fresh fruit that’s available everywhere this season.
  • Walnuts – Lightly toasted walnuts give this dish a bit of crunchy texture. If you like almonds or pecans better, use them instead!
  • Brown Sugar, Cinnamon & Nutmeg – The perfect flavor combo to pair with apples and walnuts.
  • Salt – Brings all the flavors together.
  • Eggnog – The seasonal treat to add creaminess and flavor to your morning dish.
  • Maple Syrup – To help coat the walnuts for sweetness and glaze.
  • Butter – To add richness.

Baked oatmeal is super-convenient for feeding several people (hello, holidays!) and it’s an easy way to make a warming meal for all to enjoy. There’s no need to stand over the stove and stir. Baked Eggnog Oatmeal with Apples and Walnuts is an ideal holiday breakfast dish!

Ingredients

  • 2 cups eggnog, plus extra to serve with oatmeal
  • 1-2/3 cups old-fashioned rolled oats
  • 2 small apples, peeled, cored, and diced
  • 1/4 cup chopped, toasted walnuts, plus 3 tablespoons reserved
  • 7 tablespoons brown sugar, divided
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 2 tablespoons cold butter, cut into small pieces, plus 1 tablespoon reserved
  • 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, add the eggnog, oats, apples, 1/4 cup chopped walnuts, 5 tablespoons brown sugar, cinnamon, nutmeg, and salt. Whisk to combine.
  3. Evenly divide the mixture and spoon it, mounding it slightly, into 4, 6-ounce ramekins.
  4. Top each ramekin evenly with the 2 tablespoons of butter cut into pieces.
  5. Bake for about 40 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
  6. As the oatmeal cools slightly, add the reserved 1 tablespoon of butter, 2 tablespoons of brown sugar, and maple syrup to a saucepan over medium heat. Stir to melt the butter and dissolve the sugar. Add the reserved 3 tablespoons chopped walnuts to the pan and stir to combine. Remove from the heat.
  7. Evenly divide the glazed walnuts and use them as topping for each ramekin.
  8. Serve warm with extra eggnog to pour over the oatmeal.
