Looking to satisfy a snack attack with a healthy crunch? Then you’ll want to get your hands on this Sweet, Spicy & Citrus Roasted Walnut Mix. It’s dotted with pepitas and dried cranberries for added texture, color, and tastes.

Coating the ingredients in this mix with lime juice, honey, chili powder and ancho chili powder provide the flavor. Baking it brings the fabulous crunchy texture to this snack mix.

I’ve been reading up on the benefits of walnuts, and as you might know, there is a wealth of goodness that comes from these wrinkly nuts. You’ll find they’re high in Omega-3 fat (the kind that comes from plants and that can help reduce heart disease).

Walnuts can help reduce inflammation in the body (inflammation is a component of many chronic diseases); they’re good for good-gut health; and they can help lower your blood pressure, manage and lower your risk for Type-2 diabetes, AND….they taste great.

Sweet, Spicy & Citrus Walnut Mix

Moderation is key to anything we eat, and that includes all the good things, too. You’ll see that I’ve sprinkled some of these Sweet, Spicy & Citrus Walnut Mix over ice cream, which is probably not on any “healthy foods” lists, but we all deserve a treat once in a while, right?

Go nuts over walnuts with these recipes:

Pumpkin and Walnut Rugelach Cookies

This mix, with pepitas (a type of pumpkin seed) and dried cranberries, makes a fabulous snack whether you’re hiking, you need an afternoon crunch at work, or if you’re on a road trip.

Ingredients

  • 1-1/2 cups raw walnuts
  • 1/2 raw pepitas
  • 2-1/2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 teaspoons ancho chili powder
  • 1-1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 3/4 cup dried cranberries

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Line a baking pan with aluminum foil.
  3. Add the lime juice, olive oil, and honey to a bowl and mix to combine.
  4. Add the ancho chili powder, the chili powder, and salt to the mixture and stir.
  5. Add the walnuts and pepitas to the lime juice mixture and stir to coat.
  6. Transfer the mix to the lined baking pan.
  7. Bake for about 10 minutes. Toss gently and bake for another 6-10 minutes, checking to ensure the mixture doesn’t burn.
  8. Remove from the oven and add to a bowl. Add the dried cranberries and toss the mixture to combine.
  9. Transfer back to the baking pan and allow the mixture to cool completely.
  10. Store in an airtight container for up to several days.

Notes

Remember: don't add the dried cranberries to the mix until after it's removed from the oven.
