Stuffed Zucchini with Herbed Orzo, Almonds, and Fresh Tomato Sauce

Are you sad to start saying your goodbyes to summer? Even though it’s still so hot here in Phoenix, there’s something about summer that makes you wish it would last a little longer. Maybe it’s all the fresh produce?

Stuffed Zucchini with Herbed Orzo, Almonds, and Fresh Tomato Sauce is a filling and pretty dish that’s perfect for a Meatless Monday (or any day of the week). It easy to make, too, and that works well any time of year. The orzo and almonds provide heartiness and a bit of crunch, and don’t forget the feta! It’s great sprinkled over the tops of the final product.

I made this dish for my work with SheKnows.com, and really enjoyed its simplicity, as well as its flavor. You don’t always get both for dinner.

So instead of rushing to get to the end of the season, kick back for just a bit longer, let the fall wait, and try this fresh and filling recipe for Stuffed Zucchini with Herbed Orzo, Almonds, and Fresh Tomato Sauce.
