Grilled Eggplant Sandwiches with Jalapeño-Spiced Marinara

These Grilled Eggplant Sandwiches with Jalapeño-Spiced Marinara make a hearty meal perfect for a Meatless Monday. I love that they’re easy to make and still provide vibrant flavor and heartiness.

Grilling may be a summer activity for most people, but where I live it’s grilling season all year. Besides, I don’t know of any part of the country right now where the weather is keeping anyone indoors, so I say get out and grill a little longer! 

I love this time of year (who doesn’t), and I’m excited to be heading back to where I grew up, in Ohio. From what I hear, the weather really is starting to feel like fall so I can’t wait to wear boots and a few sweaters, too. And I can’t wait to enjoy some of my mom’s cooking!

My mom often made eggplant in some form or another – fried, sautéed, added to lasagna – and I love it. If you love eggplant like I do, try my recipe for Grilled Eggplant, Cherries, and Couscous Salad. These Grilled Eggplant Sandwiches with Jalapeño-Spiced Marinara are a great way to enjoy the flavor of eggplant.

It doesn’t take much time on the grill for the eggplant to cook and acquire a touch of smokiness, or to put together a delicious homemade sauce. Tucked in with some mozzarella, you’ll have yourself a fabulous “sangweech” (my mom’s pronunciation) perfect for a Meatless Monday meal. While I’m back home, I’ll also be attending my high school reunion. I seriously can’t believe how much time has passed (no, I’m not revealing which reunion I’ll be celebrating)! Visits home are always hectic, and there is never enough time to see everyone I’d like to see or do everything I’d like, but one thing is for sure: there is always time to enjoy a few great meals. I’m hopeful that one will include eggplant.

    I'm not usually a fan of eggplant as I find it rather plain but this looks sooooo good, especially with that sauce! I think that would take away any blandness from the egg plant.
