S’mores-n-berry Bars: National S’mores Day is August 10

Ingredients

For the crust
  • 6 tablespoons unsalted butter, melted
  • 1-1/2 cups crushed graham cracker crumbs
  • 2 tablespoons sugar
For the brownie
  • 1 package prepared chocolate brownie mix
  • 1/3 cup vegetable oil (based on package ingredients)
  • 2 tablespoons water (based on package ingredients)
  • 1 egg (based on package ingredients)
  • 1 pint fresh raspberries, cleaned, dried and cut in half
  • 1/2-2/3 cups of mini marshmallows
For the topping
  • 2 whole graham crackers
  • 1/2-2/3 cup mini marshmallows
 

Directions

  1. Preheat your oven to 325 degrees F.
  2. Line an 8-inch-square baking pan with foil so that it hangs over the edges and spray it with nonstick cooking spray.
  3. Use a medium-sized bowl to mix together the melted butter, graham cracker crumbs and sugar.
  4. Press the crumb mixture evenly on the bottom of the pan.
  5. Bake until golden, or for about 20 minutes. Remove and set aside.
  6. Raise the oven temperature to 350 degrees F.
  7. Meanwhile, use a medium-sized bowl and mix the brownie mixture together, then gently fold in the raspberries.
  8. Pour the batter over the graham cracker crust.
  9. Bake the brownie mixture for about 25 minutes (based on your brownie mix), or until a toothpick inserted in the middle of the brownie comes out clean.
  10. Remove the brownie and place the oven on broil.
  11. Meanwhile, break the two graham crackers into small pieces and arrange them in a single layer on top of the brownie.
  12. Next arrange the mini marshmallows evenly over the top of the graham crackers.
  13. Place the pan back in the oven, just for a few minutes, until the marshmallows begin to brown. Keep a close watch on them so they don’t burn under the broiler.
  14. Remove from the oven and cool completely.
  15. Remove from the pan using the overhanging foil and cut into bars to serve.

I have never heard of sidewalk cooking…how brilliant! I know my niece and nephew would love it! And these bars look DELICIOUS. I wish I could have had these for dessert (instead of leftover cake!) Thanks for sharing, my friend!

Looks really great. Can’t wait for Aug 10. But come to think of it…I can celebrate with smores ahead of its special day, can’t i? ;)

Seems like a winner, but I was wondering just how you fold in the raspberries. Even doing it gently can cause the berries to crush too much. A small, thinlike spatula, perhaps?

Yep, it’s tasty (still need to try the “sidewalk s’mores” version), and you’re right about the raspberries. But I don’t really think it matters if they’re broken or mushed. For one of the versions I made, I put whole raspberries on top of the batter, then the crackers & marshmallows.
